IngredientsFor the Egusi Soup
  • 2 cups ground egusi (melon seeds)
  • 500g assorted meat (beef, tripe, or goat meat)
  • 200g smoked fish
  • 1 cup palm oil
  • 1 medium onion, chopped
  • 2 tablespoons ground crayfish
  • 2 seasoning cubes
  • 2 cups spinach, ugu (fluted pumpkin leaves), or bitter leaves
  • 2 fresh peppers, blended
  • Salt to taste
  • 4 cups meat stock
For the Pounded Yam
  • 1 medium yam tuber
  • Water as needed
Preparation MethodStep 1: Cook the Meat

Wash and season the assorted meat with salt, seasoning cubes, and onions. Cook until tender and reserve the stock for the soup.

Step 2: Prepare the Egusi Base

In a bowl, mix the ground egusi with a little water to form a thick paste. Set aside.

Step 3: Build the Soup

Heat the palm oil in a large pot over medium heat. Add the chopped onions and sauté for two minutes. Stir in the blended pepper and cook for a few minutes.

Add the meat stock, smoked fish, and crayfish. Allow the mixture to simmer before gently adding spoonfuls of the egusi paste into the pot.

Step 4: Cook the Egusi

Let the egusi cook for 15 to 20 minutes without excessive stirring so that it forms soft, flavorful lumps. Add the cooked meat and adjust seasoning as needed.

Step 5: Add the Vegetables

Stir in the spinach, ugu, or bitter leaves and cook for an additional five minutes. The vegetables should remain vibrant and fresh while blending perfectly with the soup.

Step 6: Prepare the Pounded Yam

Peel and cut the yam into chunks. Boil until soft and tender. Pound using a traditional mortar and pestle or use a food processor until smooth and stretchy.

Shape into serving portions and keep warm.
